Which is better for you, raw veggies or cooked veggies?
Some say raw is better, others refute and say no advantage, and cooked is fine. Let’s do a comparison of just two veggies: Broccoli and Spinach both contain:
-Vitamins C and A and K
-Minerals Folate, Calcium, Iron, Magnesium, Zinc, Selenium, and Potassium
If these are cooked higher than 115 degrees Fahrenheit and most are, you have lost most of these above benefits. Cooking destroys the enzymes in food and you need the enzymes to absorb those vitamins and minerals!
Raw veggies still have enzymes and so you receive activated minerals and vitamins. Even more it includes chlorophyll, lutein and indoles which fight off unhealthy cells.
Chlorophyll is alkalizing and cleansing to the body systems; and delivers oxygen to our tissues.
You also receive the compounds; carotenoids and polyphenols that help the cardiovascular and immune system.
Try raw whenever you can, like spinach salads or lightly steam your broccoli for the best benefits.
