Celery is considered to be one of the most nutritious foods you could ever consume, but in order to reap the benefits of those nutrients, it should not be cooked. Health Benefits Of Drinking Raw Celery Juice

Alkalizes the Body

Drinking fresh celery juice neutralizes acidity, alkalizes the body (a Standard American Diet is very acid forming), and balances the body’s pH. A slightly alkaline pH is essential to good health (and fertility). Celery juice also rehydrates the body and replaces electrolytes so it is a fantastic and much healthier alternative to Gatorade and other sports drinks.

Prevent Alzheimer’s

A 2006 study from Vanderbilt University found that drinking fruit and vegetable juices more than three times a week can cut the risk of developing Alzheimer’s by 76%. The Luteolin in celery juice has also been shown in studies to be helpful in combating dementia. The reason for this is that it helps to reduce inflammation in the brain. Eating celery or drinking celery juice can be a preventative measure and possibly a treatment for Alzheimer’s disease.

Celery juice as a Cancer Fighter

Full of powerful antioxidants and anti-cancer compounds like flavonols, phenolic acids and furanocoumarins, celery juice has a lot of potential as a cancer fighter. The flavonoids apigenin and luteolin have been shown to help prevent the spread of cancer.

Fight Inflammation

Celery juice is a good source of Polyacetylene as well as Luteolin. Polyacetylene an organic polymer found in celery juice is said to reduce prostoglandins which are chemicals that produce inflammation. This can help to ease rheumatic and arthritic pain as well as many other inflammatory problems in the body.

Simple Celery Juice Recipe

Ingredients:

3 stalks of celery
3 apples
1 stem broccoli (optional)
1/2 lemon (optional)

Directions:

-Wash the fruit and vegetables using water and a stiff vegetable brush. Keep the leaves on the celery.
-Core the apples.
-Cut the peel off the lemon – some people like to leave this on but I find this makes the juice too bitter.
-Slice the fruit and vegetables to fit your juicer.
-Juice and enjoy.
