The Perfect Guilt-Free Summer Treat: Green Smoothie Ice Cream (No Sugar Or Dairy Involved)

Green smoothies are all the hype these days and for good reason. Leafy greens are amongst the healthiest and nutrient-dense foods on our planet. They are packed with high-quality amino acids, essential minerals, vitamins, antioxidants, and many other health-promoting phytonutrients.

Green smoothies make eating raw leafy greens a breeze. They taste great and are insanely good for your health. Even kids are happily gulping those green smoothies full of goodness on a daily basis.

Adding large amounts of leafy greens into your diet will transform your body from the inside out. And I have some great news for you. While experimenting in the kitchen with healthy sugar- and dairy-free desserts, I came up with this super simple low-calorie summer treat.

I made this tropical green smoothie ice cream a few days ago for family and friends and it was a huge success. I’m sure this is going to be our guilt-free summer treat. So why not give it a try?

Tropical Green Smoothie Ice Cream

Ingredients (serves 2)

  • 2 bananas; peeled, chunked and frozen
  • ¾ cup mango; peeled, chunked and frozen
  • ¼ cup pineapple; peeled, chunked and frozen
  • 1 cup packed spinach, kale, or paksoi
  • ½ to 1 cup coconut milk (or almond milk)
  • Cacao nibs, toasted coconut flakes, fresh fruits, or pistachios (topping)

Directions

You can use any blender or food processor but a high speed blender, such as a Vitamix or Blentec will give the best results. They are well worth the investment if you’re a green smoothie lover. But if you can’t spare the money, your regular blender will do the trick if you add a bit more of the liquid base.

Blend the coconut milk and spinach until smooth. Use more coconut or almond milk if needed or use a tamper to push the greens down into the blades. (Click here and learn how to make your own coconut milk or almond milk, It’s super easy!)

Add all other ingredients except for the toppings and blend again. Use tamper if needed to push ingredients into the blades or use more liquid base.

If you used a high speed blender and not too much of the liquid you can immediately top the ice cream with your favorite toppings and serve as a soft-serve ice cream.

For a firmer consistency, pour the mixture into a plastic container or serving dish and freeze for 2 to 3 hours.

This delicious summer treat can be stored up to 1 week into your freezer, but it is best served the same day. If you store the ice cream overnight you may have to let it sit at room temperature for a few minutes before you can scoop it.

Let your creativity triumph and experiment with your family’s favorite flavors. (FYI: another great combo: almond milk, banana, blueberries, dates, vanilla extract, and kale)
