  • 1 sterilized glass jar with screw-top lid
  • 1 pound olive oil
  • 1 pound fresh oregano

Directions

Remove the stems from the oregano leaves, then crush them lightly (using a mortar and pestle if needed) and place in the bottom of the glass jar, tamping them down. Pour in the olive oil. Close the lid to the jar tightly and store in a cool dark place and leave it there for at least a month, then remove the leaves, strain the mixture and store in a clean glass bottle.
