Go Green Today with this Great Asparagus Dip

We all know we are supposed to eat lots of dark green vegetables but we don’t always make it happen. I was at a party the other day and found this delicious and super easy to make dip.  I couldn’t get enough of it and got the recipe to share with all of you!  First, here’s the great news about the health benefits of asparagus:

Anti-inflammatory

With its unique combination of nutrients, asparagus is one of the best anti-inflammatory foods. Rich in saponins, quercetin, rutin and isohamnetin, asparagus is a great food to help to reduce the risk of many health problems.

Antioxidant

Asparagus is packed with antioxidants. Including vitamin C, beta-carotene, vitamin E, and several minerals. Asparagus is also one of the vegetables that contains the most glutathione, a specific antioxidant that is especially good at supporting liver detoxification.

Anti-cancer

The glutathione and antioxidants that asparagus contain are so abundant it makes an ideal food to reduce cancer risks.

Supports digestion

Asparagus is an unusual digestive support food because it contains a nutrient called inulin.  Inulin is considered a prebiotic, a substance that passes undigested to the large intestine, feeding the friendly bacteria associated with nutrient absorption.

Heart healthy

Rich in dietary fiber and vitamins from the B group, asparagus is also good for your heart health.  Fiber helps to naturally lower cholesterol levels, and vitamin B helps to regulate homocysteine, an amino acid that is closely involved in health diseases.

Asparagus Dip

1 lb of Asparagus (steamed)

8 oz of Mascarpone Cheese

2 tsps of fresh minced garlic

1 Tbs of Olive Oil

1 pinch salt

This recipe is so simple and will be the hit of the party.  Just steam the asparagus until soft. Then drain well and puree in food processor or your Vitamix.  Add in the cheese, garlic and olive oil to blend until creamy.

Serve with your favorite pita chips, sliced veggies or crackers.
