This is one of my favorite smoothie recipes. I make it frequently when I am in a hurry and take it to go for breakfast, eating in the car. I know it is better to enjoy and eat food slowly, but when in a rush this smoothie provides nutritious fats, protein and vitamins to start my day. It can easily be eaten as a snack or for a healthy lunch, as well.
Ingredients:
2-4 raw, pastured organic eggs
1/4- 1/3 cup raw, pastured organic yogurt (can use full-fat plain, pasteurized yogurt, as well; Good brands of yogurt include Seven Stars Farm, Kalona and Trader Joe’s organic European yogurt)
1 tbsp virgin, organic coconut oil
1/4-1/2 cup frozen organic mixed berries
Directions:
Add eggs, yogurt, oil and berries to blender and mix. You can add a small amount of water to make it less thick if desired. Pour into glass and enjoy a healthy start to your day.
