Delicious Homemade Vegetable Soup

On warm winter nights home made vegetable soup is especially enjoyable. It is a delicious and an easy way to add healthy vegetables to one’s diet. It can be enjoyed as a main meal or side dish. Adding meat broth will increase the nutrition of this meal. Ingredients:

  1. 28 oz can or jar of organic crushed tomatoes
  2. 24 oz jar of plain organic, tomato sauce
  3. 3-6 minced garlic
  4. sea salt, black pepper, bay leaf, basil, oregano to taste
  5. one organic yellow onion, chopped
  6. 4 stalks organic celery, chopped
  7. 4-8 organic carrots, peeled and sliced
  8. 1-2 organic quash, zucchini, and/or potatoes
  9. fresh or frozen 16 oz. organic broccoli
  10. organic frozen 16 oz. green beans, broken into smaller pieces
  11. organic frozen 16 oz mixed vegetables (carrots, corn, peas)
  12. organic frozen 12-16 oz. spinach
  13. 1-2 cans of Eden organic kidney beans
  14. 2-4 cups filtered water
  15. chicken and/or beef broth (optional)
  16. pastured stew meat, cut into smaller pieces (optional)
  17. 3-4 tablespoons organic, refined coconut oil

Directions

  1. Melt coconut oil in large soup pan
  2. Saute chopped or cut up onions, celery, garlic and meat
  3. Add tomato sauce, one bay leaf, filtered water and meat broth
  4. Bring mixture to boil and lower heat
  5. Add fresh cut up vegetables and simmer for half hour
  6. Add crushed tomatoes and frozen vegetables and simmer 30- 60 minutes until all vegetables are cooked
  7. Add seasonings to taste
  8. Vegetables can be adjusted to what is available and preferred
